ROYAL ICING
If you want to compose your royal icing to have the perfect soft bite, check out my recipe below.
Mix 2 lbs. Powdered sugar and 1/3 cup meringue powder in mixer on low to incorporate.
Add in 1/2 cup warm water. Once it starts coming together add flavoring (2 tablespoons clear vanilla) and 1/8 cup of light corn syrup. After combined if still thick you can add in 1/4 cup more of water, turn up the mixer to medium high for about 2 minutes until icing is thick. Transfer icing to bowl with air tight lid.
Tip: Icing in air tight bowl can sit on the counter for 2 weeks, in the refrigerator for 3 weeks, or in the freezer for up to 3 months.
